Fall is here and these cookies were just what we needed today.
Crisp on the outside and chewy on the inside...they are perfect gingery goodness.
Chewy Ginger Raisin Cookies
{Originally from a Martha recipe}
2 cups flour
1TBS ground ginger
1/4 tsp. nutmeg
1 tsp. baking soda
1/2 tsp. salt
1 tsp vanilla
1 stick butter, room temp.
1 cup granulated sugar
1 large egg
1/3 cup unsulfured molasses
1 cup raisins
Beat butter, sugar, vanilla, ginger and nutmeg until fluffy. Add egg and molasses and mix well. Add flour, salt, baking soda, and raisins. Mix well. Cover and let sit in fridge for 30 minutes.
Preheat oven to 350 degrees. Roll balls of dough in sugar and place 2 inches apart on cookie sheet lined with parchment.
Bake for 16 minutes just until centers are set.. Let cool.
Store in airtight container for up to a week.
