I have this lunch at least a couple of times in the week.
Usually, I can't even finish the whole thing.

I use Ezekiel Sprouted Grain Tortillas.

I found them at my local health food store, but you can purchase them HERE {it is a large amount, though.}
This is a really low carb meal and has a lovely portion of veges and protein to boot.
Sprouted Tortilla Pizza with Spinach and Red Pepper
1 Ezekiel Sprouted Grain Tortilla
Parmesan Cheese
Garlic Powder
Dried Basil
Fresh Spinach Leaves
Chopped Red Pepper
Shredded Mozzarella Cheese
1 tbs. Pizza Sauce
Preheat oven to 400 degrees.
Place tortilla on a baking sheet.
Spread pizza sauce on tortilla and then shake a little garlic powder, dried basil, and Parmesan cheese.
Sprinkle enough Mozzarella cheese to cover pizza.
Top with spinach and peppers.
Bake for 4-5 minutes, then broil for about 3 minutes.
Eat. It. Up!

That sounds delicious! I do have a question: how does the taste of Ezekiel bread compare with whole grain bread (or, in this case, tortillas)? I have been interested to try Ezekiel bread, but I'm wondering if it takes some getting used to, if it's dry, etc. Love the idea of a tortilla pizza! Thanks for sharing. :)

I would say that the tortillas are definitely drier in texture, but really delicious. To me, the flavor is wonderful....almost a but nutty...and I love it!
