Perfect on a hot day as a little in between snack.

Cream Pops
{adapted from Trim Healthy Mama}
Make the chocolate...
Melt 1/2 cup coconut oil.
Add 1/4 cup cocoa powder and about 1 tbs. {- or + depending on your taste} Truvia {ground in coffee grinder}, 1 tsp. vanilla.
Stir with fork until well combined.
Pour into a small dish lined with wax paper. I use a bread pan.
Freeze until solid.
Filling:
Mix together:
2 pkg. cream cheese
2 tbs. Truvia
1 tsp. vanilla
When all three ingredients are creamy, add in 1 1/2 tbs. chunky peanut butter, frozen chocolate, chopped into small pieces.
Mix until just combined.
Place tablespoon dollops onto wax paper lined cookie sheets.
Add a flat toothpick to the top.
Freeze.
Store in freezer bags.
Enjoy!
