This morning was cold and damp with a crisp feel to the air and oatmeal just sounded yummy.
I vamped it up with a little pumpkin puree and it was absolutely delicious!
This recipe will be one that we make again and again.
It is creamy, rich, and healthy.
Pumpkin is chock full of beta-carotene which promotes vision, immunity, and can reverse aging...I like that part!
Honey Pumpkin Oatmeal

Mix together oats, milk, pumpkin puree, pumpkin pie spice, and honey on stove on medium heat.
Add more milk or oats to achieve the desired consistency and cook until oats are soft.
Heat through and serve.
Top with cinnamon, raisins, coconut, almonds, or more honey...if you like it super sweet:).

My plates are from Bed Bath and Beyond and are an older line called "Garland." I love them, but I really have a mish mash of ironstone plates that I collect form tag sales and thrift stores. I love that they all match, yet have a distinct look.
