Sometimes a crisp Sunday morning calls for an extraordinary breakfast of the pumpkin sort.
All browned and puddled in butter, with a sprinkle of white powdered sugar.
Pumpkin Spice Pancakes
{serves about 12}
1 cup canned pumpkin
1 1/2 tsp. pumpkin pie spice
1 tsp. vanilla
1 tsp. maple flavoring
1 tbs. brown sugar {or use stevia to taste}
2 eggs
1/4 cup melted butter {or coconut oil}
3 tsp. baking powder
1 cup flour {or almond @ 2 cups, (1)white, or (1) whole wheat}
1 cup milk or almond milk {+more if needed}
1/8 tsp salt.
Mix up and fry in butter.
Enjoy!
Here is a way to make your own pumpkin puree, if you have a few pumpkins hanging around.

I made pancakes this morning, too!
Honey Buckwheat ones... (mostly from a box - gasp!) but they were good and gobbled up...for sure!
